They Eat What! Latin America’s Most Exotic Foods – Part 2

Well if I didnt get to you in part one with treats from Colombia, Brazil and Mexico youre gonna just love what youll get here in part two of this three-part series. Were going to travel into the jungles of Colombia and up into the high Andes mountain range in Ecuador to introduce you to some Eye-opening, high-flying specialties thatll make partly-cooked greasy pork liver seem like Haute Cuisine. Hungry yet? Tighten your belt then and lets go. Three-Toed Sloth Called Oso Perezoso (lazy bear) in Spanish, these dense-haired, slow moving creatures live off of jungle foliage and leaves. You would think theyd be easy to catch, but in fact, they can live high up in the trees and be extremely difficult to spot. Cleaning and preparing to cook one takes several hours. Most of time being spent just to remove the coarse, dense hair which is done by dipping the carcass in boiling water and painstakingly scraping or pulling the hair off. The result is worth it though as it has the most delicious meat Ive ever tasted when cooked in a thick, rich stew. Sloths are kept as pets since theyre actually quite harmless despite having up to four-inch long claws. Bofe Pronounced bow-fay, the dried, roasted lungs of a cow are this snack food. Often available at airport restaurants and street food vendors in Colombia, its a somewhat acquired taste, but not one thats unpleasant by any means. Most people simply have to get past the thought of what it is (believe me; you DONT want to see it before its cooked). Its difficult and time-consuming to prepare. Ready to eat, its a dark, unappetizing looking concoction cut into bite-sized cubes for easy munching. Vulture Yup, you read right Buzzard, is eaten in some towns in the Central Highlands of Ecuador. Its caught, plucked and thoroughly cleaned (I wouldnt want THAT job!). The high Andes mountain range runs from Colombia south through to Chile and is home to vast flocks of Condors. Condors are carrion-eating birds. I dont have to tell you what carrion is, do I? The cleaned, prepared bird is normally prepared in soup with seasonings, broth and vegetables like yucca, potato, plantain, celery and carrots. Cows Eye Ever wonder what happens to the unwanted parts of food animals like the reproductive organs? Well in Latin countries, these parts are eaten same as the rest of the animal. Consisting mostly of liquid, cows eye is sold fresh, of course. Its most frequently cooked by being stirred into a hot pot of chocolate and served as a drink or a thick soup of sorts. Although its relatively common and popular in Colombia, I havent taken the plunge yet. Several of my acquaintances say the concoctions quite tasty. How would YOU like to try it? Student Loans – The Essential Information Resource!

By Dave Lympany Student loans in Canada are provided by a joint Federal and Provincial program with the amount of and eligibility for a loan different between the Provinces and so depends upon the Province you are a resident of (your Province or territory of residence is decided by where you have lived for the last 12 months consecutively whilst NOT a student). You may, however, attend any educational establishment in the country provided both the establishment and the program of your choice are listed by the assistance office in your province. There are several different types of funding for post secondary education that include grants and bursaries (which you wouldnt have to pay back) but there are 2 main types of student loan the Federal and Provincial programs. Whichever type of loan you wish to apply for it all has to be started off by applying to the Provincial/Territorial Assistance office for the Province you are officially a resident of. The main attraction of a student loan is that although they are REAL loans that do have to be repaid, they are interest free while you remain enrolled in an eligible education program. Once you graduate/leave education the repayment terms are set (normally low interest and you agree the repayment term) and you begin to pay them back. Banks and other lending establishments are no longer involved in offering new loans as all funding is provided by the federal or provincial governments. Quebec, Northwest Territories and Nunavut are NOT involved in the Canada Student Loans program and have their own systems. If you are a resident of one of these 3 provinces or Territories then you need to contact the particular office for that Province. To start the ball rolling with the application for a loan there are several processes that you should consider. Your eligibility is the most important both you (the applicant) and the course you wish to undertake must meet the criteria laid down. The applicant: The main factor of eligibility is whether you are intending to be a full or part time student. If you are a part time student (20 59% of full course load) you may only apply for federal assistance though you would apply through the provincial/territorial assistance office. A full time student (60% + of a full course load) may apply through the same offices but will be considered for both Federal and Provincial support (depending upon the province in question) though this would have to repay both the loans. The difference between the Provinces and Territories is prevalent here as these provinces: Alberta, British Columbia, Manitoba, New Brunswick, Newfoundland and Labrador, Nova Scotia, Prince Edward Island and the Yukon all would entail paying the loans back separately. If you are from Ontario or Saskatchewan then you would make one payment back to the NSLSC which would cover the total amount borrowed from both the federal and provincial programs. The course you wish to enroll on must be listed on the Master List of Designated educational Institutions it is strongly advised that you ensure the establishment you wish to attend is recognized by your provincial provider and the course choices meet the necessary requirements before you commit to it. This also applies if you wish to attend an overseas establishment. Your personal financial status will determine the amount of assistance you will be offered with the Federal loan system covering up to 60% of the total you are assessed as needing and the provincial system contributing up to the remaining 40%. Your needs are assessed by the provincial office when you apply as they handle the initial application and will forward you the loan documents. Once the Provincial or territorial Student Assistance office has received and processed your application, it will establish the amount of loan you are entitled to apply for and carry out credit checks. Once approved, your Canada Student Loan will be administered by the National Student Loans Service Centre (NSLSC) through to its termination (full repayment). This agency is responsible for all loans supplied since 1st August 2000 and has two distinct sections. The Public Institutions Division (looking after anyone attending a course at a Public facility such as a University or Community college) and the Private Institutions Division (for those who are receiving instruction at a privately funded facility like a technical college or trade school). Wheatgrass – Mother Natures Own Medicine

By Christopher J Williams Wheatgrass is grown from wheatberries (or wheat grain) as a sprouted seed which matures at usually 7-10 days for indoor grown wheatgrass. Outdoor varieties of wheatgrass are also grown and have a longer, and more typical, field grown crop harvesting period as opposed to the younger sprouting variety. When the young sprouted wheatgrass reaches about 7 -10 inches in high, at a period of typically between 7 -10 days, it is ready for harvesting. Since wheatgrass is a fibrous thin plant indigestible to humans, it is typically juiced using a suitable wheatgrass juicer and ingested in small amounts of generally 1-2 ounces per day. It has long been promoted as a superfood with many natural healing benefits due to it’s high chlorophyl content and multi nutrient contents, and was the main source of nutrition and recuperation recommended by Dr Ann Wigmore, founder of the Hippocrates Institute. Dr Wigmore, like many others, discovered the beneficial healing properties of wheatgrass at a critical time in her life, when modern medicine could not cure her own ailments and she decided to resort to traditional herbal remedies, remembering that her grandmother was an avid believer in natural remedies to aid in healing. Although there is believed to be no hard scientific evidence supporting the beneficial healing properties of wheatgrass, there was a series of studies conducted in the 1940′s into chlorophyl, the main constituent of wheatgrass (around 70%), which was largely funded by Charles Kettering, Chairman of the Board of General Motors. The AMA accepted the cereal grasses as a natural vitamin food in 1939. In the early 1940′s medical doctors studied a substance called chlorophyll. Charles Kettering, then Chairman of the Board of General Motors funded much fo the research that was done. Medical doctors found that chlorophyll was a wonderful healer–that it cured all kinds of things: peptic ulcers, sinus infections, anemia, etc. The AMA actually accepted the cereal grasses as natural vitamin food in 1939! Wheatgrass also contains 82 out of the 92 minerals found in soil including Calcium, Magnesium, Iron, Zinc, Potassium, Phosphorus and Cobalt, and the high cholorphyll content of wheatgrass also acts as a powerful detoxifier cleansing the liver, cells, tissues and blood. It is these qualities that some modern medical practitioners believe could well be the reasons that wheatgrass has aided the recovery of many terminally ill patients. There are three key enzymes which are believed to have significant anti-oxidant properties, one of which is Superoxide Dismutase (SOD), which is present in wheat grass. It has been shown that cancerous cells are deficient or completely lacking in the anti-oxidant SOD, and consequently a diet consisting of regular wheatgrass doses of typically 1-2 fluid ounces (30-60ml) daily can assist the body in fighting or defeating carcinogens or cancer causing radicals in the body. Anti-Oxidants also clean the body of free radicals, which can reduce or eliminate cell mutation (or avoid it if taken regularly prior to the onset). Cell-mutation takes place in the early stages of cancer and other terminal illnesses, and free radicals contribute to the mutation. Find ways to penetrate new markets and help you create marketing materials. A consultant can keep track of your activities and determine what is working and what is not. They can also help to redirect your campaign if things are not working as expected. How do you know if you need a coach or a consultant? There are some basic questions that you can ask yourself to help determine if you need a coach or consultant. 1. Do you need help creating a marketing plan that you can implement yourself? Keeping The Weight Off

By Chris Stout Think about it. If you consume more than you burn, you’ll be left with a surplus. If you burn less than you consume, you have weight loss. UnDiet can help you get your weight loss strategy started, but UnDiet alone isn’t going to help you lose pounds. You have to find a balance between how many calories you consume and who many calories you burn. Short-term weight loss plans that restrict your eating habits can actually prevent you from losing weight. You can’t fluctuate between extreme weight loss and extreme weight gain. When you starve yourself, your body stores the energy it already has, and your metabolic rate decreases. When you feast again, you are more likely to gain weight because your metabolism has to compensate for the starve-induced lag. If you go through multiple dieting cycles like this, then it can make it much more difficult for you to keep the weight off after you’ve finished your last diet. You need to take a long-term approach to weight loss. Think of your health, quality of life and future well being. Be willing to make sacrifices so that you can keep your body running smoothly. Don’t start trying to lose weight if you’re only looking for short-term benefits. Crash diets won’t give you the results you need, and if they do, the results won’t be healthy. Lead a normal balanced life. Avoid excess. Eat frequent, balanced meals. Exercise a little bit every day. You don’t have to join a gym to do this, just jog around your block. If you don’t feel like jogging in your own neighborhood, drive to a park or a hiking trail. Just get outside. Have your friends join you. Push each other into a regular fitness routine. It doesn’t really matter what you end up doing, just as long as you make a concerted effort to get your juices flowing every single day. So sit down and make a plan. Think big and be ready to execute. If you want to go on a diet, then you’re not ready to keep the weight off just yet. If you want to embark on a multi-pronged, long-term, sustainable weight loss strategy, then you’re ready to begin. Healthy foods, in small portions, should be consumed four to five times a day. Exercise, whatever the form, needs to happen daily. If you can maintain a balance between caloric intake and caloric burning, then you’ll be in a good position to keep the weight off.
